Ingredients

Ingredients for muffin butter

  • 3 Bananas
  • ½ tbsp. salt
  • 1 tbsp. baking
  • 1 tbsp. baking soda
  • 1 tbsp. baking powder
  • cups all purpose flour
  • 1 ighlty beaten egg
  • cup melted butter
  • ¾ cups granulated sugar

Ingredients For Crumb Topping

  • 4 tbsp. all purpose flour
  • cups packed brown sugar
  • ¼ tbsp. ground cinnamon
  • 2 tbsp. plant based or regular butter

Instructions

  • Add the salt, baking soda, and baking powder to the 1 1/2 cups of flour and sift well . Using a fork smash the bananas.
  • Transfer the bananas to a bowl and add the lightly beaten egg, melted butter, granulated sugar and incorporate the ingredients well. Pour the flour into a larger bowl and add the banana mixture. Fold the ingredients together just until the flour is moistened "DO NOT OVERMIX".
  • Spray the muffin pan with non-stick baking spray then fill each of the muffin cups halfway with the banana muffin batter then top the muffin batter with a generous amount of crumb topping.
  • Pre-heat the oven to 350 degrees, place the muffins in the center of the oven and allow them to bake for exactly 20 minutes, stick a toothpick in the center of the muffins and if the toothpick comes out clean then the banana crumb muffins are done.
