Ingredients

  • 1 head of cauliflower
  • 2 tbsp. olive oil
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 2 eggs, whisked
  • 1 cup of diced protein (chicken, shrimp, or tofu)
  • ½ cup frozen peas and carrots
  • 2 tbsp. soy sauce (or coconut aminos for a soy-free option)
  • 2 green onions, thinly sliced
  • Salt and pepper, to taste
  •  Optional toppings: sesame seeds, diced green onions

Instructions

  • Rinse and dry the cauliflower. Remove the leaves and stem, and cut the cauliflower into small floret
  • Using a food processor or a grater, pulse or grate the cauliflower until it resembles rice-sized pieces.
  • Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until softened.
  • Push the onion and garlic to the side of the skillet, and add the whisked eggs. Scramble the eggs until cooked through.
  • Add the diced protein, frozen peas and carrots, and cauliflower rice to the skillet. Stir everything together and cook for an additional 5-7 minutes, or until the cauliflower is tender.
  • Stir in the soy sauce (or coconut aminos) and green onions. Season with salt and pepper, to taste. Serve the cauliflower fried rice in bowls and garnish with sesame seeds and diced green onions, if desired. Enjoy!
