Ingredients
1head of cauliflower
2tbsp.olive oil
1small onion, diced
2cloves of garlic, minced
2eggs, whisked
1cup of diced protein (chicken, shrimp, or tofu)
½cupfrozen peas and carrots
2tbsp.soy sauce (or coconut aminos for a soy-free option)
2green onions, thinly sliced
Salt and pepper, to taste

Instructions
Rinse and dry the cauliflower. Remove the leaves and stem, and cut the cauliflower into small floret
Using a food processor or a grater, pulse or grate the cauliflower until it resembles rice-sized pieces.
Push the onion and garlic to the side of the skillet, and add the whisked eggs. Scramble the eggs until cooked through.
Add the diced protein, frozen peas and carrots, and cauliflower rice to the skillet. Stir everything together and cook for an additional 5-7 minutes, or until the cauliflower is tender.
Stir in the soy sauce (or coconut aminos) and green onions. Season with salt and pepper, to taste. Serve the cauliflower fried rice in bowls and garnish with sesame seeds and diced green onions, if desired. Enjoy!
